A refreshing, super flavorful and powerful Greek pasta salad that is not only gluten free, but also vegan & dairy free friendly!

• 2 cups cooked gluten free pasta
• 1 cup chickpeas (cooked or straight from a can, rinsed & drained would both work)
• 1/4 cup sliced red onion, soaked in water for 5 min prior to adding to pasta salad
• 1 cup peeled and chopped cucumber
• 1/2 cup diced fresh tomato
• 1/3 cup fresh basil
• 1/4 cup vegan feta cheese
• Zest of 1/2 to 1 whole lemon
• Juice of 1 lemon
• Salt & Pepper to taste
• Drizzle of extra-virgin olive oil
•OPTIONAL: kalamata olives
Simply mix all ingredients together and enjoy the super rich and powerful flavors from Greece! Top with a drizzle of olive oil and a lemon squeeze. Add kalamata olives if you enjoy their very acquired taste!
