Tofu, Sweet Potato, Avocado Power Bowls:
*3 servings
•400g diced sweet potatoes
•1 package organic tofu, crumbled
•Huge handful of fresh basil, chopped
•Ground cumin
•Chili powder
•Cayenne pepper powder
•Sea salt
First, place diced sweet potatoes in avocado oil in a pan and pan fry until soft. Add all the seasonings to the sweet potatoes to your taste preference. Then, take sweet potatoes out and separate into 3 separate bowls. Now crumble tofu in the same pan you used for the sweet potatoes (unless you’re cooking them at the same time) and spice again! As the tofu bears being done, add the basil so it can cook down. Separate into the 3 bowls. When you’re ready to eat, heat the mixture up and then add 1/2 of an avocado to the top. Enjoy!
(You can place this mixture into taco shells and enjoy as tacos as well as nachos if you put over chips and add some salsa and green onion!)
