Tofu Taco Bowls

Taco bowls have to be some of the easiest and quickest bowls to make. They can have so much variation and be fun every single time! Here is one vegan variation that is super enjoyable, healthy, and filled with great nutrients!



What you need for these vegan taco bowls:


-1 package of tofu, firm or extra firm

-Sweet Potatoes, diced

-Fresh tomatoes/cherry tomatoes

-Corn

-Black Beans

-Avocado

-Green Onions

-Basil

-Jasmine/Spanish Rice and/or Corn Chips

-Avocado Oil

-Cumin, Chili Powder, Paprika, Sea Salt (or any Mexican seasoning of your choice)



First, dice the white part of the green onion and carmelize in a pan with avocado oil. Take them out of the pan, then add in the diced sweet potato with your Mexican seasoning and cook until soft. Once the sweet potatoes are soft, take them out and crumble the tofu into the pan and season aggressively (tofu takes on the flavor of what you give it, otherwise it is completely bland and boring). Once it is cooked thoroughly (feel free to taste test!) then you will add the basil, tomatoes, corn, beans, and sweet potatoes back into the mix to cook everything together. Taste to see if it needs more seasoning and if so, add it now. Finally, add back the green onions and top with the green part of the green onion as well. Once everything is cooked together, service on top of rice or with chips! Easy as that!
